Employees appointed to positions involved with poultry and/or egg grading must take and pass the USDA shell egg grader and/or poultry grading license program within 90 days of employment and maintain valid licensure.

This position’s required headquarter is negotiable only within Martin or Okeechobee County.

This position has regulatory responsibilities and is subject to the provisions of s.112.313, F.S. and Section 60L – 36.003, Florida Career Service Rules and Regulations.

This position works night-shift.


Acting as a shell egg grader or poultry grader, the inspector is responsible for the accurate assignment of grades in a United States Department of Agriculture (USDA) voluntary shell egg or poultry processing facility.  Inspector documents grades, sanitation, the handling of discrepancies and advises management personnel of necessary corrective actions.  Grade determinations are made according to USDA grade standards for quality and suitability for human consumption.

During routine plant operation, the inspector conducts sanitation inspections to include evaluating processing methods, production controls, equipment design, structural design and maintenance, and personnel practices.  Determines critical and non-critical areas to assure that eggs and poultry for human consumption are safe and or prepared, packed and held under sanitary conditions.  Shell egg or poultry samples are personally selected by the inspector and graded by an on-line sampling procedure to ensure that they are representative of the product being produced.  Samples are selected randomly throughout the workday.  Inspectors are to certify grade, quality, weight, labeling, case identification, and condition for each lot, identifying the official sample case.  A USDA certificate can be issued to certify grading results.  All certificates and stamps are the responsibility of the inspector and must be maintained under lock and key when not in the possession of an authorized person. Continuous line sampling up to the maximum of 500 cases per hour, averaging 6 samples per hour, is to be accomplished while grading shell eggs.  While grading poultry, the inspector will complete a minimum average of 1 sample per hour for each type of product produced that bears a USDA grade mark.                  

Upon the initiation of daily shell egg plant operations, the inspector will review building and grounds conditions, plant facilities, grading room conditions, equipment and utensils that contact egg surfaces, coolers, shell egg protection and cleaning procedures, facilities for identifying the cases, cartons and containers of shell eggs with the grade marks, and the disposition of inedible product.  Upon the initiation of daily poultry plant operations, the inspector will review all grading stations to insure access, proper lighting requirements, and cleanliness. All labels will be reviewed for proper identification.            

It is the inspector’s responsibility to ensure that all labeling and packing material is submitted for approval to USDA after review.  Related tasks include review of labels for inclusion of mandatory consumer information and selection of food samples for laboratory analysis when circumstances indicate possible food adulteration or other violation of the law.  Operates and maintains the scales, egg candling equipment, thermometers and grading stations.

Initiates retention tagging, stop use orders, detention tagging, destruction reports, release notices, and all applicable federal forms when indicated by inspection findings.  Enforces Chapters 583 and 500, Florida Statutes, Chapter 5E‑8, Florida Administrative Code, and Title 7 of the Code of Federal Regulations, Parts 59 and 56 and advises management.  Inspects designated processing firm(s) for compliance with USDA requirements and other tasks as may be designated by the section or supervisor.  Some tasks require evening, holiday or weekend activity. Independently exercises professional judgment and institutes appropriate enforcement actions while discharging responsibilities.

Administrative duties include the preparation of accurate and complete inspection reports, various time and attendance reports, vouchers, requisitions and other applicable state and federal forms as may be required. All applicable reports will be completed and sent to Tallahassee and Valrico, Florida. The inspector will also follow all policies and procedures for maintaining and securing files, computers, and other issued equipment.

Attends training sessions and courses.  Performs other related duties as may be assigned.
