Food Service Director I – SES 70042500 

This advertisement is for an SES position located at Sumter Correctional Institution in the Food Service Department.

Annual Salary Rate: $32,500.00

SPECIFIC DUTIES AND RESPONSIBILITIES:

The incumbent in this position directs and supervises the overall Food Service operations in a major correctional institution and satellite facilities.  Duties may include but will not be limited to the following:

  • As supervisor, this position communicates with, motivates, provides or coordinates training, evaluates employees' work, plans and directs the employees’ work, and has the authority to hire or recommend the hire, transfer or discipline of subordinate employees.
  • Assists the Food Service Director II in meal planning based on participation, documentation of meal participation, and proper food preparation and recording of therapeutic diets for the inmate population and, if applicable, county jail inmates. Ensures meals are prepared in accordance with the Department’s master menu manual and within the Department’s established per diem.
  • Assists with ensuring proper sanitation in accordance with 64E-11, FAC and department rules.
  • Assists in maintaining sufficient food inventories and food supplies required to feed the master menu.
  • Assists in maintaining NCNP documentation in accordance with DOE and DC rules.
  • Supervises Food Service employees and delegates authority properly so that subordinates may accomplish their duties
  • in Supervisor’s absence. Relieves subordinates when necessary. Completes evaluations in a timely manner.
  • Assists in the supervision/scheduling/training of inmates assigned to food service and gain time reports.
  • Assists with answering inmate requests and informal grievances pertaining to food service.
  • Assists with providing appropriate documentation for ACA files.
  • Assists with providing Corrective Action Plans for inspections as applicable.
  • Assists with submitting work orders as necessary to ensure all equipment is in proper working order.
  • Supervise the feeding of meals to the inmate population and follow all Health Department Rules and Regulations.

  • Ability to plan and direct a food service program including the purchasing, storage, preparation and serving of food at an institution.
  • Ability to plan nutritional meals for groups of people.
  • Ability to utilize problem-solving techniques.
  • Ability to develop various reports.
  • Ability to assess budgetary needs.
  • Ability to formulate policies and procedures.
  • Ability to prioritize work load.
  • Ability to determine work priorities, assign work, and ensure proper completion of work assignments.
  • Ability to establish and maintain effective working relationships with others.
  • Ability to understand and apply applicable rules, regulations, policies and procedures.
  • Ability to work in a high paced kitchen and produce quality meals to be served on time to the inmate population.

REQUIRED QUALIFICATIONS:

  • High school diploma or its equivalent.
